Wine Making

(Danny)

I have taken up making wine. I am not sure how the hobby really started. I think I had picked up some books on it and thought it didn't sound to hard. We would drink some occasional wine and had some spare fruits at times. So why not try to make wine.

We have been doing it for about three years. I would have to get out my notebook to know for sure but that is close enough. The first batch was strawberry. Sounds pretty good, doesn't it? Well, my advice is never try the first batch of any wine maker. I didn't know when it was done fermenting and bottled it too soon. It popped corks in storage and had a yeasty taste.

Then I tried grape and plum. The grape is now champangne (sp?) since I had a similar problem as the strawberry (remember, this is part science and part art. The science part I don't have a problem with but the art side...) The plum wasn't too bad but I added too much sugar.

Ok, I am not a purist when it comes to making wines. I add ingredients to make it taste the way we like. It only makes sense since we will be drinking it (and anyone who visits!).

More to come.
